Sometimes being a Mom sucks!

There are many reasons why someone could say this…. I’m saying it today because I am TIRED! I am very tired and I just want to get some sleep.

Don’t get me wrong, being a Mom is the greatest thing that has EVER happened to me and most of the time it’s good stuff. Lets be honest though, there are days, situations, moments and/or experiences that come with the territory, that suck! I obviously choose my children over sleep… However, it will be nice when I get to really have a good night’s sleep again!

Her God Parents are Kim and Margaret. Luckily our church allows you to have two god-mothers! Speaking of our Church, Father Taranto is amazing and hilarious! I am so thankful for such an amazing man leading our parish.

Five on Friday Birthday Edition!

I’m linking up with Darci over at The Good Life Blog for Five on Friday and Lauren at Lauren Elizabeth for H54F…My birthday Edition!

1. Today is my 28th birthday. Saying that sounds weird to me.  I’ll be thirty in two years and that just seems unreal! So far life has been pretty good to me.

2. This will be the first year in a long time that I’m not having a summer party! My brother’s birthday is the 28th and we usually have a party together… not this year! He moved to Texas with my oldest brother and I am not organized enough yet with 2 young ones. We usually…

3. Have an adult pinata at our summer party. It’s always a big hit. We put lots of fun things in it and it’s fun to act like a kid and see who busts it open! Everyone makes a mad dash to pick up all the goodies…. as adults we might actually be worse than the kids.

The usual suspects:
Mini bottles of liquor
Lighters
Slim jims
Chap-stick
Some sort of candy
Plastic shot glasses
Packets of Tylenol (or other pain reliever)
Mini cigars

In the past, before kids, we put some very adult items in it like condoms and little lubes…. we’re just not that cool anymore!

I have also done a 30 birthday one for my oldest brother and put growing old items in with the usual. I added tuck pads and antacids.

4. I am going out this weekend. This will be my first night away from T2. We are going to go out to dance and have a few drinks and then will end up back at my house for more socializing. I’m pretty excited! My Mom is taking both girls overnight. She’s awesome!

5. I’m getting new dishes for my birthday! I’m getting Corelle. They are inexpensive and very durable. I bought more expensive ones when first got married and they are chipped and not looking so good. Growing up we always had Corelle and they didn’t break easily and that is what I need with my little ones! Getting household things for your birthday definitely means your an adult!

Nothing hurts more than seeing your child in pain.

My oldest baby had her first injury this weekend. Don’t get me wrong she’s had some bumps and bruises, but nothing that requires us to go to urgent care or causes THAT much pain. Burns hurt! I have never experienced such heartbreak. All the things that have ever happened to me don’t even come close to seeing my daughter in that much pain.

How did it happen?! Well, I very rarely ask my husband to help me cook anything… he’s just not a good cooker! I asked him to cook the hamburger because I was tending to the baby and needed to pump. He let Liv watch him and she had pulled up a chair. She knows what hot means so he wasn’t worried about her so much. He went to drain the meat and when he turned his back she put her hand on the stove. I’m thinking since we have a glass top and she didn’t see fire, she wasn’t still thinking that it was hot…

She started screaming and crying and it was just sad. Burns really hurt and there was nothing we could do. We put her hand in cool water which did help but not all the way. I was crying with her. It was upsetting. No parent ever wants to see their child hurt. I ended up deciding to take her to urgent care since it was bubbling up and she was in so much pain. She wouldn’t let me get her dressed so, I just grabbed a dress out of the closet and we went. On the way there I called my Mom and Grandma to tell them about what happened. They both met me there. I am thankful for my supportive family!

We got there and checked in. She is my tough girl, and once she calmed down, she played while waiting to see the doctor. She just waved her hand to get a breeze and said ‘ouch it hurts’ every few minutes.

There wasn’t much the doctor could do but, she did give us a prescription for when the blisters popped. She also told me to give her some Tylenol for pain.

Once we came home I gave her the Tylenol and I totally let her sleep in my bed.

Since Sunday the first blister has popped. Not fun.

And so, nothing has EVER been as heartbreaking as seeing her that hurt. Burns are seriously the worst and no 2 year old should ever feel that. I can’t imagine what her little self was thinking while experiencing being burned. I wish I could have taken it away and made it all better. I know there will be injures that happen, it’s a part of life, but it really sucks! I can’t put them in a bubble to protect them. Although…

Pickle Time

I made my first batch of pickles this weekend! I planted 3 cucumber plants this year and I am going to be busy the next few weeks. Needless to say I will only plant 2 next year…. they are totally out of control!  In the past I’ve tried my own recipe for dill pickles and it wasn’t so great. I love to experiment with food… it’s totally my thing but, not with pickles. I’ll add hot peppers to make them spicy but besides that I use Mrs. Wages kosher dill mix. The flavor is good and everyone seems to enjoy them. They have other kinds of pickle mix as well. I totally want to try the zesty bread and butter mix and I think I will this summer.

I just follow the directions on the back of the package (see below). It is kind of hit and miss with the amount of cucumbers I may have. If I don’t have enough for all the pickle mix that it makes I either discard it or refrigerate it (if I’m going to use it in the next few days).

Just a side note: technically you aren’t suppose to put that canning pot on a glass stove top. I haven’t had any problems but, just a disclaimer I wanted to put that out there.

Also, I added serrano peppers to 4 out of the 6 jars to make spicy pickles.

Directions from the package
9-11 lbs pickling cucumbers (about 50 – 3 to 4 inches)
3 1/3 cups white vinegar (5% acidity)
7 1/3 cups water
1 pouch Mrs. Wages Kosher Dill Pickles Mix
Yield: 7 quarts

PREPARE and PROCESS home canning jars and lids according to manufacturer’s instructions for sterilized jars.

WASH cucumbers and remove blossoms; drain. Leave whole, cut into spears or slice.

COMBINE Kosher Dill Mix, vinegar and water into a large non-reactive pot. Do not use aluminum. Bring mixture just to boil over medium heat, stirring constantly until mixture dissolves.

PACK cucumbers into sterilized jars, leaving ½-inch of headspace. Evenly divide hot pickling liquid among the packed jars, leaving ½-inch of headspace. Remove air bubbles and cap each jar as it is filled. If more liquid is needed for proper headspace, add a mix of 1 part vinegar and 2 parts water.

PROCESS pints 5* minutes, quarts 10*minutes, in a boiling water bath canner. Test jars for airtight seals according to manufacturer’s directions. If jars do not completely seal, refrigerate and consume within two weeks.

Product is ready to eat after 24 hours. Before serving, chill to enhance flavor and crispness.

*Process time listed is for altitudes less than 1000 feet. At altitudes of 1000 feet or more increase processing time 1 minute for each 1000 feet of altitude.

I ordered my canning pot from Amazon. It’s not the best and most expensive but, it works just fine! You can find it here if you are looking for a pretty inexpensive one to get started.

2. I totally made my own granola bars this week and they were a big hit! They taste amazing and are pretty healthy… no high fructose corn syrup! They are cranberry, peanut, pecan with chia seeds. My husband even enjoyed them! This is something I definitely keep doing. I can’t wait to experiment with different flavors!!

3. 4 month check-up this week for T2. My little preemie baby is getting so big! She weighed in at 11 lbs and 7 oz! I have to say that I am so happy that she is catching up! She’s still only 5% for weight but, she’s getting there! She is however 50% for height! I think I’m going to have another tall girl like her sister!!

4. I am working on everything I can to get Livvy’s sleep schedule back on track. She has totally regressed and now wakes up at night and doesn’t go back to sleep! I received some suggestions from her pediatrician and I am excited to see how it goes!

5. Ayla’s Baptism is Sunday! I am super excited to have her Christened and then have family and friends over to celebrate! I will be posting all about it afterwards! God Bless my little Angel!
